I love cooking especially cooking meals from scratch but sometimes I get bored of the same cycle of meals we tend to have so when we were offered to test out a Riverford Organic Food Recipe Box I was very excited to do so. It gave us a chance to test out some new meals and put a bit more excitement back into cooking with some fresh organic produce.
The Riverford box scheme began when Guy Watson started delivering vegetables locally to 30 friends in Devon and now around 47,000 boxes are delivered a week to homes around the UK from Riverfords regional farms. There are loads of different boxes avaliable from vegetables, fruit, meat, dairy and the recipe boxes. We tested out a 3 day recipe box and were so pleased it.
It arrived when it said it would with loads of contact from the delivery team; delivery days are specific to your location. All of the contents of the box was packaged perfectly and I love how they even divide the box up into sections for Recipe 1, Recipe 2 and Recipe 3 just to help you out that bit more. All of the meat had plenty of date on it and the veggies looked great.
First night we went for the Beef Fajitas which I was really excited about; they were packed full of veggies including carrots, peppers and courgettes and a really tasty and refreshing avocado salsa which my sister got the job of making and she did a pretty good job. The beef came pre cut and seasoned into tasty strips although I possibly would have cut these a little thinner if we were to have them again. It was as simple as cooking down the veggies and meat in a pan, chucking it into bowls and into the middle of the table for everyone to delve into. We quite often have chicken fajitas so it was a really nice change to have them with beef and it was so delicious.
The next meal we had was Moroccan Grilled Chicken with Kissir. I wasn’t sure I would like this one as I can be a bit fussy when it comes to certain flavours but I was pleasantly surprised and really enjoyed this dish. I like that the Riverford recipe boxes come complete with a recipe booklet with info about the recipe and then detailed descriptions of how to do it. It makes me cook things differently and is great for giving you inspiration for other meals you might go on to cook. The chicken was nice and simple to cook and was served with bulgar wheat, salad and a pomegranate dressing. All the flavours went together so well and another meal that we all enjoyed.
The final Riverford recipe we had was Spelt Spaghetti with Mushrooms, Chard, Ricotta and Pine Nuts and this was soooo yummy and really really simple to make. I love mushrooms and this almost tasted like a pizza kind of pasta as it had lots of garlic, oregano, cheese and tomato in. I love that it was topped with toasted pine nuts as the crunch was really nice to change up the texture and throwing in the chard gave it some extra goodness in there. Not everyone in my family likes Ricotta but like all of the Riverford recipes you don’t have to put in everything so I had the Ricotta on mine and saved the rest to enjoy later in the week.
These were 3 meals I would never cook and they were really delicious. I would definitely order a Riverford Box again!
