Vanilla filled Chocolate Biscuits

I’ve got a seriously good recipe to share today, probably my new favourite; Vanilla filled Chocolate Biscuits that are creamy, crunchy and seriously delicious!!

This recipe is so basic but by following a few of the steps it makes the biscuits so crunchy that pair perfectly with the creamy vanilla filling. I’ve chomped on a few of these in the last 24 hours and they are so good and super easy to  make.

Ingredients; (Makes 20-25 biscuits depending how much mix you eat!)

For the Biscuits; 

  • 170g Plain Flour
  • 90g Cocoa Powder
  • 1 Teaspoon Bicarbonate of Soda
  • 1/2 Teaspoon Baking Powder
  • 140g Butter
  • 320g Caster Sugar + extra for dusting
  • 1 Large Egg

For the Filling; 

  • 225g Butter
  • 435g Icing Sugar
  • 2 Tablespoons Vanilla Extract

Method; 

  1. Biscuits- Preheat the oven to 190C/375F/Gas5 and line 3 baking trays with baking paper.
  2. Using an electric mixer with a paddle attachment cream the butter and sugar together.
  3. Once creamed add the egg.
  4. Sift together the flour, cocoa powder, baking powder and bicarbonate of soda in a separate bowl.
  5. Slowly add the dry ingredients to the mixer and mix until the dough is combined.
  6. Using a teaspoon measure scoop balls of the dough, I actually weighed each one to be 15g so they were all roughly the same and line them on the baking trays.
  7. Get the bottom of a glass wet and dip it in caster sugar. Using the glass press down on the biscuit dough lightly until around 4mm. Re dip the glass into caster sugar every 2-3 biscuits so that each of the dough balls are covered.
  8. Bake in the oven for around 10-15minutes. Until just going firm.
  9. Leave to cool!
  10. Whilst the biscuits are cooling make the filling.
  11. Beat the butter until its soft then add in the icing sugar and the vanilla and mix until the filling is thick.
  12. Using a piping bag swirl a spiral of icing onto one of the biscuits then lightly press another on top.
  13. ENJOY!

I used the Kenwood Pastel Chef Sense to make these biscuits which made it super easy, I’ll be posting a full review of the mixer soon so keep an eye out for that!!

The recipe is nice and simple and easy for children to get involved in to. As well as putting ingredients into a bowl/mixer Amelia got stuck in rolling the biscuit dough into balls although she referred to it as play dough and she loved pushing the glass down onto the biscuits and pressing them down!

I was so impressed when getting these out the oven and it may seem a bit extreme to pipe the filling in but it really gives that extra finish off making the edges look neat and helping them all to look uniform. Definitely something I will be making again or playing around with some different flavours!

    Ohhh Alice! These look insanely good. I’m definitely going to give these a go next time Bella and I do some baking as I’ve probably already got all the ingredients. The recipe looks so simple but the outcome is so impressive. Also LOVE the look of that mixer, the yellow is gorgeous! My Kmix is red which isn’t a colour I would normally go for but it was the cheapest colour lol! xox
